Our honey comes from the flowers of jujube trees in Western Madagascar, whose nectar is highly prized by Malagasy bees. More precisely, it is harvested in Toliara (Toléar in French), in the Menabe region.
The jujube tree is a small, thorny shrub that produces red fruit ranging in taste from apple to date, depending on its stage of ripening. In Madagascar, it's known as chichourle, and is part of the island's extremely rich biodiversity of plants and trees.

Honey should be kept away from light, heat and humidity, between 9 and 25°C.
We do not recommend refrigerating honey, as this may alter its aromas and cause it to ferment. Fermented honey has bubbles on the surface and a characteristic alcoholic odor; it is no longer fit for consumption.
Close your jar tightly after opening and consume it quickly, to enjoy the best possible taste experience.
If your honey crystallizes (denser texture, presence of crystals), you can still consume it. To regain its original texture, warm it gently in a bain-marie.
