It is to thymoquinone that they owe the majority of their therapeutic properties. Numerous studies have demonstrated that nigella seeds are:
- antioxidant;
- anti-inflammatory ;
- antalgic;
- immune stimulants;
- antibacterial;
- antifungal;
- hypoglycemic;
- hypotensive;
- hypocholesterolemic ;
- anticancerous and antitumor;
- antiallergic;
- antiparasitic;
- anticonvulsants;
From a nutritional point of view, black cumin seeds are very interesting, as they contain:
- vitamins A, PP and K1;
- B vitamins (B1, B2, B6, B9);
- vitamins E;
- carbohydrates ;
- minerals (iron, calcium, zinc, phosphorus,copper, potassium) ;
- unsaturated fatty acids (omega 3, 6 and 9) ;
- protein, with 8 or 9 essential amino acids.
These are therefore first-rate supplements that possess numerous health properties, and that we benefit from incorporating into our daily diet.
To be eaten whole
Nigella seeds can be chewed/crowed as they are.
Consume seeds as an infusion
Just put about a tablespoon of seeds in a container, pour in boiling water, leave to infuse for about ten minutes, strain and drink.
Grinding the seeds
You can grind your seeds into powder, either directly or after pan-roasting them. To do this, you can use a blender/mixer or a small hand mortar.
Add them to cooked dishes
Nigella seeds can be used as spices when ground to a powder, sprinkled over dishes or added to sauces.
Whole, they can be added to raw dough to make oriental breads, naan, pizzas... or sprinkled on top just before cooking to decorate.
They can also be added whole to juices, smoothies, granola, muesli, salads, oriental pastries, porridges, talbina, energy balls, cereal bars, sweet or savoury cakes, homemade jams.
Our nigella seeds originate in Ethiopia. This variety, called habachiya in Arabic, is known to be one of the best in the world. In fact, it's from this variety that the best black cumin oil is extracted.
The ideal growing conditions enable the seeds to be concentrated in active ingredients, particularly thymoquinone. Their characteristic, rather strong, almost pungent taste sets them apart from all other kinds of seeds.
